WINEMAKING
The fruit is machine harvested
at night and upon receival, the
fruit is immediately crushed and
destemmed. Fermentation on skins
continues for 7 days, then pressed
to tank to complete primary
fermentation. Upon completion
of primary fermentation, the
parcels are then racked onto
French and American oak chips for
Malo-lactic fermentation in tank,
then sulphured, and matured for
4-6 months prior to blending, fining
& filtration.
pH: 3.6
VINEYARD
Sourced from a combination of local
growers across the region, with
vine ages varying between 15 to 30
years. Fruit is selected specifically
due to ample flavour and evenness
of ripening.
